Purple stripe
Persian Star is a beautifully textured Purple Stripe with outstanding flavour characteristics. Heritage Variety. When the cloves of the Persian Star are peeled, the tips look like a “Persian star”, hence the name. It is superior all-around garlic with a delectable flavor with a mild spice. Good for roasting, baking, or enjoying raw. (6-8 months storage)
Hot on the tongue with a fresh, green roundness that transports one to the windswept plateaus of Tibet. Has a sweet aftertaste. Once cooked it becomes more mellow, but still the heat makes itself known. It's a delicious addition fresh or cooked. This garlic would also make a great HOT Salsa or HOT Pickled Garlic. Strongest flavour. Purple stripe variety that produces large bulbs when planted in good soil with high fertility and moisture. Not surprisingly, this is probably the most powerful garlic for use in herbal medicine due to its high allicin and alliinase contents (the compounds responsible for garlic’s health benefits). Great for herbal remedies as well as baking (rich and sweet flavor), in stews or raw. Best tasting baking garlic. Medium heat. (6-8 months storage)
Marbled purple stripe
Combines the absolute best of both growing characteristics and flavor. Beautiful bulbs with well defined and large cloves, hardy in the field and the taste of the finest of garlic’s. Not a scorcher, but a heart and palate melter. (6-8 months storage)

Strong balanced flavour with lots of heat. This family rate somewhere between a Porcelain and a Purple Stripe in flavor and will provide good overall garlic character to many recipes. The "Table Wine" of the garlic kingdom. Fat cloves, hardy. (3-5 months storage)
Rocambole
Full-bodied, deep, rich flavour. hot and fiery. It also contains high amounts of allicin, the compound in garlic believed to be an immune-system booster. The depth of flavour is remarkable, with a deep earthy muskiness. When cooked, the flavor is sweet, rich, and complex. Easy to peel. Medium heat. Ranks among the top two or three cultivars in just about any taste competition. Does well in cold winters. (6 months storage)
Fairly new variety. A nice zingy flavour but not bitter. Grows larger then others of its variety. Very good cooking garlic and one to sauté if you want that great welcoming smell of gourmet cooking for when your guests arrive. Rich, moderate heat. Cold hardy. (4-5 months storage)
Porcelain
Spicy when raw to a hot and aromatic, true gourmet garlic flavour when cooked. Performs well in cold. Heavy wrappers. Large bulbs and very fat cloves. Will produce large plants next year. Some consumers mistake it for elephant garlic as cloves are the size of a large thumb. Very good with fish or chicken. (9 months to 1 year storage)
